Cinnamon Waffels with Apple Compote

Preparation
Cinnamon Waffles
1. Separate the eggs and beat the egg whites till stiff.
2. Mix egg yolks with milk, cinnamon powder, vanilla sugar and salt.
3. Stir flour, baking powder and cocoa powder into the egg yolk mixture and finally fold in the beaten egg white.
4. Heat a waffle iron, coat it with oil and bake the waffles one by one until golden brown. If you don't have a waffle iron, you can also bake the batter as small pancakes.
Apple compote
1. Heat a pot with water, cinnamon, vanilla and cloves.
2. Peel and cut the apples into small bite-sized pieces.
3. Add the apple pieces to the water and let them simmer until they are soft.
4. Pour off the water and enjoy the warm apple pieces with the waffles.

3 eggs
100ml milk
70g spelt flour
1/2 tsp baking powder
1/2 tsp cocoa powder
1/2 tsp cinnamon
1 pkg. vanilla sugar
1 pinch of salt
1 tbsp. canola oil (for baking)
Apple compote
2 apples
250ml water
4 cloves
pinch of cinnamon
pinch of vanilla
